Recipe review- Tuscan garlic chicken

Since we've been married, Zach has encouraged me to try several foods that I've never eaten much. Peppers are some of them! This recipe features red bell pepper, onions, garlic, spinach, and breaded chicken. The sauce was creamy and flavorful, but not too heavy. I liked that was able to pan sear the chicken and then use the same pan to cook the sauce. Anything that means less dishes for me is great! : ) I also loved all the fresh veggies packed into this meal! It always makes me feel like I am fixing the best for our family when it's fresh and (mostly) healthy! This recipe is definitely in my "make again" category! I'm 2 for 2 in my recipe experimenting! 

Recipe review: stuffed mushrooms

We loooove mushrooms at our house. Especially me, so when I saw this recipe I got super excited.  I am also posting this from my phone, and I can't figure out how to get a Pinterest link on here, so if you want to find it, go check out my Pinterest boards! Before: looking yummy! After: tasting yummy! I love that everything in these were fresh ingredients and so flavorful. Basil, oregano, diced fresh tomatoes, onion, and of course, the portobellos! The only thing is, we were fixing them as our main meal, and they obviously didn't fill us up, but they would be an awesome appetizer! They definitely are in my "make again" category! Weekend recap

We had a busy, busy weekend! When I got home from work Friday, Zach and I went to Chick-fil-a for supper, and then to Kohl's and the mall. We had I get him new swim trunks for our upcoming vacation and I also found the awesome shelf/mirror/holder ever. It was originally $40, on clearance for $7.99, AND I had my 30% off, so it was $5! The black doesn't match our kitchen, and since I can't resist a fun painting project, I'm itching to get it redecorated and up! But, what color to paint it? On Saturday, I went to mow at my Mama Joyce's, but her lawn mower ( that had just gotten out of the shop) was STILL messing up, so I only got 2 laps around the field finished! Argh! So I went ahead and swam the afternoon away and got burnt! My own stupid fault since I didn't do a very good job with sunscreen. My belly and eyelids hurt for days!  That night when Zach got off work, we ate ate at Qdoba and met Suzanne and her boyfriend at Kohl's to help him pick out a suit,...

July is flying by!

The past couple weeks we have been trying to enjoy as much of summer as we can!  I don't even want to think about school starting soon!  We have gone fishing two times, gotten a new washing machine, done some shopping in preparation for our upcoming beach vacation (cue the hallelujah chorus), playing with our Nellie girl, going to the drive-in, Zach is helping lead an Engineering and Manufacturing summer camp at USI (Proud wife right here!),  and I have been busy with summer camp field trips of my own! We got a great deal on this washer at Lowe's and couldn't have been more excited to have one again!  For a month we went to either our parents' or Mama Joyce's to wash our clothes.  Talk about being a burden!  I bet they're all glad we got one as well! 4th of July

                                  This year we celebrated 4th of the July three different days.                                On July 3rd, we went to Zach's parents' house to celebrate with their family.  Our Niece and her adorable new hair cut! 3 years

Amidst Zach's recovery from surgery, we slipped our 3rd anniversary in there.  It dawned on me that we probably wouldn't get to celebrate our anniversary as we would like to because of Zach being "down and out."  A second later it dawned on me that I didn't care one bit .  I cared that I would have my husband to celebrate with.  He would be in one whole piece with me, well (ish), and happy... and that is truly all that I could ask for.  I think part of the reason we may have gone through all of this was to give me an even deeper appreciation for my husband. He is such a strong man.  The things he's had done to him in the past few weeks would've killed me. He is so witty and funny. I've said it once, and I'll say it again.  He can always make me laugh, even when I don't want to... and for that, I love him even more. He is a hard worker. He loves me (and all my imperfections.)
