Weekly Wrap Up (October 7-13)

On Sunday, we had supper at Zach's Parents' house.  We had chicken and rice and we were so stuffed when we left! On Monday I took the day off because it was the first day of Zach's fall break!  We slept in, which was so nice and then went for a late brunch at IHOP!  They just started their pumpkin pancakes again and they were delicious!  I also tried their caramel hot chocolate, which was too good for words.  Too bad I had to ruin it by logging all those calories.  After that we went to Rural King... Zach's favorite!  Then we went hunting all afternoon and had potato soup at Mama Joyce's!  It was such a nice day to just spend time together!     On Tuesday, our friend, Kevin, surprised up with a visit at our house.  We caught up with him for a while and then went to Chick-fil-a for supper.  Which was yummy until..... about 5:00 a.m Wednesday morning when I started throwing up.  Just to reiterate in case I've said it before.... Weekly Wrap Up (Sept. 30- Oct 6)

It is hard to believe September is gone and October is here.  That also meant Fall Festival.  We went on the 3rd and were in and out in about 30 minutes.  Zach had a bratwurst and kraut balls and I had a pronto pup and onion rings.  Nothing too exciting this year!  This week we have been busy.  I tutored 2 days and Zach worked 5 days this week! (Along with his school!) Then when Saturday came, it was time to babysit some kiddos overnight.  I got to their house around 5:45 a.m. so their parents, aunt, and uncle could get an early start to the IU game.  They were hoping the kids would sleep in, but as luck would have it, one of them woke up while we were talking and was saying in a happy voice to the monitor, "Mamaaaaa, I'm awaaake!"  Haha, I was definitely glad she sounded happy!  They both got up and the parents left by 6:30.  I thought the kids would want breakfast, but they wanted to start the day with playing!  We built with blocks, jumped in and out of

Pumpkin Muffin Recipe... Perfect for Fall!

Okay, so one of (maybe the only) things I really, truly enjoy about Fall is eating pumpkin-flavored things.  Once a long, long time ago in 4-H (around 4th grade) we made these pumpkin muffins.  I loved them then and was so proud I was able to make them from scratch!  I still love them now and love sharing them since this makes a LARGE batch!  I am not sure if this was a recipe from a magazine or what, so I don't know where it came from and am not trying to present it as my own!  Enough talk, let's get on the the goods! 3 1/2 C. Flour 1/2 tsp. nutmeg 2 1/2 C. sugar 4 beaten eggs 1 C. vegetable oil 2/3 C. cold water 2 tsp. baking soda 1 tsp. cinnamon 1 1/2 tsp. salt 1 tsp. vanilla 2 C. pumpkin 1/2 C. chopped nuts (We may be a couple of nuts around here, but we don't care for them in our muffins! : )) Yields between 26-30 muffins or 2 loaves of bread Preheat oven to 350 degrees. 5 years ago today...

Zach took me on our first date.  We met at the very end of August when we started college at USI.  It wasn't until September we really began to hang out, and then we began to talk about going on a date.  He worked at Gander Mtn. that had just opened up in Evansville.  I had been wanting to go shopping there and couldn't find the store.  Once Zach mentioned that he might be able to take me if I wanted, I definitely stopped trying to find the store on my own. ; )  The week we went, he worked every day of the week, except for one.  He told me he would take me on his one day off.  We drove to Gander first and we shopped around.  I tried on snow hats and Zach bought me a Gander cap.  Then we were driving back toward USI and Zach asked me if I had ever driven stick shift before.  He pulled into Roberts' Stadium parking lot and told me he was going to teach me.  I remember thinking, "This boy must be crazy if he is letting me drive his truck on our first date."  It went
