Since we've been married, Zach has encouraged me to try several foods that I've never eaten much. Peppers are some of them! This recipe features red bell pepper, onions, garlic, spinach, and breaded chicken. The sauce was creamy and flavorful, but not too heavy. I liked that was able to pan sear the chicken and then use the same pan to cook the sauce. Anything that means less dishes for me is great! : ) I also loved all the fresh veggies packed into this meal! It always makes me feel like I am fixing the best for our family when it's fresh and (mostly) healthy! This recipe is definitely in my "make again" category! I'm 2 for 2 in my recipe experimenting!
Valentine's morning I treated myself to a heart-shaped chicken biscuit from Chick-fil-a. They were BOGO free AND I got a survey for a free chicken sandwich. That in and of itself made my day! : ) Friday evening Zach and I tried to go out for Valentine's Day. We thought we were early enough to beat the rush, but it turned out we weren't.
